It is time for me to make a major change in my life. I have accepted a new position in Boston. I will finish my current job at the end of November and take the December to pack up and spend the holidays with my family. I’m very, very excited about this change.

I picked up some beautiful acorn squash the other day, and they are perfect for a lazy weekend meal. I prefer my veggies savory rather than sweet (I hate candied yams, for example.) So, I don’t go the brown sugar and cinnamon route when I prepare my squash.

I cut them in half (use a big, strong knife), and cleaned out the seeds. I gave them a healthy dose of pepper. Then, I placed a slice of thick cut bacon in each half. I popped them in the oven at 325, and I’ll let them bake until the squash is soft and the bacon is crisp. The bacon grease will soak into the squash. So yummy.

A friend has suggest olive oil and sage, which I might try in the future.

I needed to upgrade Wordpress, so I used it as an opportunity to switch out templates as well. This one shows the comments, so fixed. I like the antiquy feel of this design, but who know what my next mood will bring. :)
